della Nonna"},"content":{"rendered":"<p style=\"text-align: justify;\">E&#8217; giunta l&#8217;ora del<strong> mio compleanno<\/strong>.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">Solitamente la torta me la (auto-)preparo io, qui a Patatolandia sono decisamente troppo dolci per i miei gusti.<br \/>\nTanto dolci da diventare stucchevoli.<\/p>\n<p style=\"text-align: justify;\">Amo le torte semplici, casalinghe, senza troppi fronzoli o pretese.<br \/>\nCome le crostate ma&#8230; accidenti a me, non sono ancora riuscita a gestire la frolla (forse perche&#8217; non ne faccio abbastanza??).<\/p>\n<p style=\"text-align: justify;\">Sara&#8217; ma, girellando in Internet ed in Instagram, ho visto la meravigliosa <strong>Torta della Nonna<\/strong> preparata da <strong>Giuseppe.Pastrychef<\/strong>.<\/p>\n<p style=\"text-align: justify;\">E&#8217; stato amore a prima vista, magari anche a primo morso se l&#8217;avessi avuta sotto mano&#8230;<\/p>\n<p style=\"text-align: justify;\">Sta di fatto che lo Chef ha inserito la ricetta e si e&#8217; reso disponibile ad assistere le persone.<br \/>\nNel mio caso anche a sopportarle Milano<\/strong>\r\n 250gr farina frolla\r\n 125gr burro\r\n 125gr zucchero semolato\r\n 2gr sale fino\r\n 1 bacca di vaniglia - semi (*)\r\n 50gr di uovo TA (e' uno misura L)\r\n\r\n<strong>Doratura<\/strong>\r\n 1 tuorlo\r\n 1 cucchiano di panna\r\n\r\n<strong>Crema pasticcera da forno<\/strong>\r\n 500gr di latte\r\n 3 bacche esauste di vaniglia (*)\r\n 250gr panna 35% (*)\r\n 180gr tuorli\r\n 170gr zucchero semolato\r\n 75gr fecola di patate\r\n 50gr burro\r\n\r\n<strong>Finitura<\/strong>\r\n 250gr confettura di amarene\r\n q.b. amarene in sciroppo\r\n q.b. impastate fino a quando non saranno assorbite.<br \/>\nFormate un panetto spesso qualche cm (*), avvolgetelo nella carta forno e fatelo riposare in frigorifero per almeno 4 ore.<\/p>\n<p><img (*)<\/strong><\/p>\n<p style=\"text-align: justify;\">Mescolate tuorlo e panna e, con la pastella ottenuta, spennellate internamente ed esternamente, i gusci di frolla.<br \/>\nFate asciugare i gusci di frolla per circa 5\/6 minuti a 170gradi in forno caldo.<\/p>\n<p><strong>Crema pasticcera<\/strong><\/p>\n<p style=\"text-align: justify;\">Mettete in infusione le bacche di vaniglia nel latte freddo, coprite e lasciate riposare in frigo per almeno 16 ore.<br \/>\nTrascorso il tempo, rimuovete le baccge e se necessario ripristinate il peso iniziale del latte.<\/p>\n<p style=\"text-align: justify;\">Mescolate latte e panna e portateli sul fuoco (*).<br \/>\nRealizzate una pastella liscia con i tuorli, lo zucchero e la fecola.<\/p>\n<p style=\"text-align: justify;\"><img e, mescolando di continuo con la frusta, cuocete fino ad addensamento della crema.<br \/>\nTogliete dal fuoco e aggiungete il burro freddo, emulsionate un paio di minuti con un mixer a immersione, quindi raffreddate il piu&#8217; velocemente possibile la crema, copritela con pellicola a contatto e fatela riposare un paio di ore in frigorifero.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" vaniglia<\/strong>, ma direttamente l&#8217;estratto.<\/li>\n<li style=\"text-align: justify;\">La <strong>vaniglia<\/strong> (liquida) la ho inserita direttamente con l&#8217;uovo leggermente sbattuto<\/li>\n<li style=\"text-align: justify;\">Invece di creare un <strong>panetto spesso<\/strong>, lo ho appiattito direttamente a 0,6mm (ho il mattarello con gli spessori). MIO ERRORE<\/li>\n<li style=\"text-align: justify;\">La <strong>quantita&#8217; di frolla<\/strong> indicata e&#8217; sufficiente per la preparazione di\u00c2\u00a0 2 torte. Ne ho utilizzato solo la meta&#8217;, surgelando il restante.<\/li>\n<li style=\"text-align: justify;\">Essendo una <strong>quantita&#8217; cosi&#8217; minima<\/strong>, non vale la pena preparare la frolla Milano dividendo le quantita&#8217;<\/li>\n<li style=\"text-align: justify;\">Non ho le<strong> fasce microforate<\/strong>, ma ho il tappetino. Ho cosi&#8217; usato il tappetino come base, imburrando ben bene la circonferenza interna della mia tortiera.<\/li>\n<li style=\"text-align: justify;\">La<strong> crema pasticcera<\/strong> e&#8217; possibile dividere la quantita&#8217;, nel caso prepariate una singola torta.<\/li>\n<li style=\"text-align: justify;\">La <strong>panna<\/strong> trovata era al 33% di grassi<\/li>\n<li style=\"text-align: justify;\">Seguendo, per caso, un corso di Montersino, suggeriva di inserire un pochino di zucchero (sottratto dal peso totale) ed inserirlo sul fondo della pentola con il latte e la panna, in caso di <strong>piastra ad induzione<\/strong>. Questo per evitare la creazione della patina lattea sul fondo della pentola.<\/li>\n<li style=\"text-align: justify;\">Ho saltato la fase della <strong>doratura<\/strong> del guscio. Ho avuto molti problemi in fase di cottura.<br \/>\nNonostante non avessi messo il fondo alla tortiera (usandola capovolta) e posizionando l&#8217;impasto sul tappetino microforato, questo ha comunque iniziato a gonfiarsi e fare una bolla.<\/li>\n<li style=\"text-align: justify;\">Dopo 10 minuti dall&#8217;inizio della cottura il<strong> bordo e&#8217; praticamente collassato<\/strong>.
