{"id":24765,"date":"2020-08-02T15:34:35","date_gmt":"2020-08-02T13:34:35","guid":{"rendered":"https:\/\/strudeldimele.dnshome.de\/?p=24765"},"modified":"2023-07-22T10:24:03","modified_gmt":"2023-07-22T08:24:03","slug":"pulled-pork-pap","status":"publish","type":"post","link":"https:\/\/strudeldimele.dnshome.de\/index.php\/2020\/08\/02\/pulled-pork-pap\/","title":{"rendered":"Pulled pork &#8211; in Pentola a Pressione"},"content":{"rendered":"<p style=\"text-align: justify;\">La ricetta del &#8220;<strong>pulled pork<\/strong>&#8221; preparata oggi e&#8217;, originariamente, cotta con la &#8220;instant pot&#8221;.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">Non avendo questo tipo di pentola, ho seguito la stessa procedura utilizzando la mia pentola a pressione, diminuendo di poco il tempo di cottura.<\/p>\n<p><em><strong>Che cosa e&#8217; il &#8220;pulled pork&#8221;<\/strong><\/em>?<\/p>\n<p style=\"text-align: justify;\">Il<strong> pulled pork<\/strong> \u00c3\u00a8, letteralmente, il maiale sfilacciato, una ricetta tipica della cucina statunitense, ottenuto tramite una lenta cottura della carne di maiale e, contemporaneamente, la sua affumicatura. Il pulled pork \u00c3\u00a8 un piatto in voga soprattutto negli Stati del Sud quali Tennessee e le due Carolina.<br \/>\nPer realizzare il perfetto pulled pork bisognerebbe usare il taglio &#8220;boston butt&#8221; che sostanzialmente \u00c3\u00a8 un pezzo della spalla di maiale che comprende anche il capocollo.<br \/>\nNegli Stati Uniti questo taglio viene cotto soprattutto al barbeque (BBQ), cotto sopra la griglia con la contemporanea affumicatura della carne, ma pu\u00c3\u00b2 essere realizzato anche in un forno casalingo, senza affumicatura.<\/p>\n<p style=\"text-align: justify;\">La peculiarit\u00c3\u00a0 del pulled pork sta nel fatto che la carne viene resa talmente tenera da poter essere poi sfilacciata con le mani o con la forchetta (to pull = strappare, tirare, sfilacciare).<\/p>\n<p style=\"text-align: justify;\">Il pulled pork ha origine durante l&#8217;epoca coloniale grazie agli indiani Taino, che erano soliti cuocere carne e pesce su fosse ardenti. L&#8217;usanza di cuocere carne alla brace negli attuali USA risale invece alla met\u00c3\u00a0 del sedicesimo secolo, quando gli spagnoli esportarono i maiali nel sud degli attuali Stati Uniti meridionali.<br \/>\nTale piatto, che oggi vanta una crescente popolarit\u00c3\u00a0 in tutto il mondo, \u00c3\u00a8 considerato il pi\u00c3\u00b9 celebre della cucina degli Stati Uniti meridionali e viene spesso consumato in occasione delle grigliate<\/p>\n<p style=\"text-align: justify;\">Senza nulla togliere alla lunga preparazione di questa carne (cottura, affumicatura, spezie ed altri ingredienti), io l&#8217;ho velocizzata cosi&#8217;..<\/p>\n<p style=\"text-align: justify;\"><strong>Ingredienti<\/strong> &#8211;<em><a style=\"text-align: justify;\">Una volta che il tempo e&#8217; trascorso, fate sfiatare la pentola a pressione in modo naturale.<\/p>\n<figure id=\"attachment_24768\" style=\"text-align: justify;\">Rimuovete con cura l&#8217;intero maiale: attenzione che la carne potrebbe cedere durante l&#8217;estrazione!!!<\/p>\n<p style=\"text-align: justify;\">Mettete la carne di maiale su un tagliere e stracciatela con le mani o con degli &#8220;artigli da carne&#8221; (finalmente abbiamo usato il regalo di qualche anno fa di Stephan!)<\/p>\n<figure id=\"attachment_24769\" la cotenna.<br \/>\nPrima di inserire in pentola a pressione, ho comunque diviso il pezzo in diverse parti, per facilitare e velocizzare il tutto, lasciando la cotenna. Questa, comunque, e&#8217; stata incisa<\/li>\n<li style=\"text-align: justify;\">Non\u00c2\u00a0 ho cotto per 100 minuti, ma solo per 80 minuti.<br \/>\nSolitamente la pentola a pressione inizia a fischiare quando il calore interno e&#8217; superiore a 100gradi.
