altri psuedo-lievitati.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">Dopo la <em><strong><a href=\"https:\/\/strudeldimele.dnshome.de\/index.php\/2020\/06\/19\/brioche-filante-al-limone\/\">brioche filante al limone<\/a><\/strong><\/em> ed i <em><strong><a href=\"https:\/\/strudeldimele.dnshome.de\/index.php\/2020\/06\/02\/pangoccioli-chef-barbato\/\">pangoccioli<\/a><\/strong><\/em>, ho trovato anche <em><strong><a href=\"http:\/\/lamiapasticceriamoderna.blogspot.com\/p\/brioche-filante.html\">questa<\/a><\/strong><\/em> brioche filante con gocce di cioccolato.<\/p>\n<p style=\"text-align: justify;\">Perche&#8217; non fare un mix (filante e gocce di cioccolato) e provarla a fare?<\/p>\n<p style=\"text-align: justify;\">Le indicazioni date sono per ldb (lievito di birra), io ho utilizzato il licoli.<br \/>\nVedi alla fine le &#8220;Note Personali&#8221;<\/p>\n<p style=\"text-align: justify;\"><strong>Ingredienti<\/strong> <strong>&#8211; Brioche filante con\u00c2\u00a0 gocce di cioccolato<\/strong><\/p>\n<pre>320 g di farina 0 forte\r\n150 g di latte tiepido (a temperatura corporea, non caldo)\r\n8-10 g di lievito di birra fresco\r\n75 g di zucchero\r\n5 g di sale\r\n70 g di burro Lurpak a temperatura ambiente\r\n1 uovo\r\n\r\n<strong>Per la farcitura<\/strong>\r\n\r\n100 g di gocce di cioccolato<\/pre>\n<p><strong>Procedimento<\/strong><\/p>\n<p style=\"text-align: justify;\">Sciogliete nella ciotola della planetaria il lievito con il latte tiepido, 15 g di zucchero e 150 g di farina presi dal totale.<br \/>\nMescolate, coprite con pellicola, e fate riposare per 40 minuti se usate 8 g di lievito o 30 minuti se ne usate 10 g.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-23638\" justify;\">Aggiungete la farina e lo zucchero rimanenti, l&#8217;uovo, e mischiate tutto con la foglia, aumentando un poco la velocit\u00c3\u00a0 dopo che si sar\u00c3\u00a0 tutto ben questo modo l&#8217;impasto si staccher\u00c3\u00a0 dalle pareti della ciotola e assorbir\u00c3\u00a0 meglio il burro, rimanendo omogeneo.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" justify;\">Rallentate la velocit\u00c3\u00a0 e unite il burro tagliato a cubetti poco alla volta, facendolo assorbire prima di aggiungerne altro.<br \/>\nAumentare la velocit\u00c3\u00a0 e fate incordare, per ottenere un impasto liscio, omogeneo, e che si stacchi dalle pareti della planetaria.<br \/>\nCambiate gancio sostituendo l&#8217;uncino alla foglia, aggiungete il sale e fate justify;\">Formate una palla e mettete l&#8217;impasto coperto con pellicola a lievitare fino al raddopio (il tempo dipendera&#8217; molto dalla temperatura e dalla quantita&#8217; e qualita&#8217; di lievito utilizzato).<br \/>\nDividete l&#8217;impasto in 5 parti, ognuna del peso di 134 g circa, e formate delle sfere.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter justify;\">Prendete una sfera, appiattitela in un disco, cospargete con 20 g di gocce di cioccolato, e portate verso l&#8217;interno due lempi di impasto, facendoli toccare ma senza justify;\">Usare uno stampo da plumcake di 30 cm x 11 cm, foderatelo con carta forno bagnata e strizzata, e mettete all&#8217;interno il primo rotolino di impasto.<br \/>\nProcedete allo stesso modo justify;\">Fate lievitare fino al raddoppio, che con il mio stampo \u00c3\u00a8 coinciso con il bordo.<br \/>\nSpennellate con latte, cospargete con gocce di cioccolato, e cuocete in forno caldo a licoli, pur mantenendo intatte le altre quantita&#8217;<\/li>\n<li style=\"text-align: justify;\">La farina da me utilizzata era la Panettone<\/li>\n<li style=\"text-align: justify;\">Ancora non so se, per il licoli, e&#8217; necessario comunque preparare la &#8220;biga&#8221;, comunque ho seguito le istruzioni e l&#8217;ho fatto.
