{"id":17157,"date":"2019-07-16T14:21:26","date_gmt":"2019-07-16T13:21:26","guid":{"rendered":"https:\/\/strudeldimele.dnshome.de\/?p=17157"},"modified":"2023-11-08T15:08:14","modified_gmt":"2023-11-08T14:08:14","slug":"yoghurt-fatto-in-casa","status":"publish","type":"post","link":"https:\/\/strudeldimele.dnshome.de\/index.php\/2019\/07\/16\/yoghurt-fatto-in-casa\/","title":{"rendered":"Yoghurt fatto in casa"},"content":{"rendered":"<p style=\"text-align: justify;\">Ho seguito il suggerimento di <em><strong><a href=\"https:\/\/strudeldimele.dnshome.de\/index.php\/2019\/06\/30\/siria_yoghurt-di-dana\/\">Dana per fare lo yoghurt a casa<\/a><\/strong><\/em>.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">Avrei voluto utilizzare 2 cucchiaiate di yoghurt preparato precedentemente da lei, ma non mi e&#8217; venuta immediatamente questa ispirazione e, con il passare dei giorni, i fermenti lattici vivi diminuiscono di numero e di forza.<\/p>\n<p style=\"text-align: justify;\">Ecco perche&#8217; ho preparato lo yoghurt, utilizzando come base di partenza un comune yoghurt naturale, acquistato.<\/p>\n<p style=\"text-align: justify;\">In rete si possono reperire innumerevoli ricette e procedimenti.<br \/>\nChi fa bollire il latte fresco, chi quello a lunga conservazione.<br \/>\nChi poi lo fa raffreddare per proseguire il procedimento.<\/p>\n<p style=\"text-align: justify;\">Ebbene, dopo un breve consulto (soprattutto con me stessa), sono giunta alla conclusione di NON far bollire il latte.<br \/>\nQuesto perche&#8217; il latte base da me utilizzato e&#8217; gia&#8217; stato sterilizzato e portato precedentemente a bollitura. Questo sistema potrebbe essere utile nel caso in cui si utilizzi del latte APPENA munto.<\/p>\n<p style=\"text-align: justify;\">Per il resto.. mi sono fidata di lei e di quanto fa.<\/p>\n<figure class=\"wp-caption-text\">Yoghurt fatto in casa<\/figcaption><\/figure>\n<p><strong>Ingredienti<\/strong><\/p>\n<pre>750ml di latte intero (3.8% di grasso)\r\n2 cucchiai yoghurt<\/pre>\n<p style=\"text-align: justify;\"><strong>Procedimento<\/strong><\/p>\n<p style=\"text-align: justify;\">Scaldate in una pentola di acciaio il latte, a fuoco basso, fino a che non si scaldi (prima del bollore).<br \/>\nVerificate la temperatura immergendo un mignolo e contate per 10 secondi.<\/p>\n<p style=\"text-align: justify;\">A questo punto, travasate il contenuto della pentola in un altro contenitore, io ho usato un vaso di vetro pirex, con relativo coperchio.<\/p>\n<p style=\"text-align: justify;\">Aggiungete lo yoghurt, mescolate lentamente (o anche no), copritelo con un asciugamano mettete in un luogo caldo a maturare.<br \/>\nDana lo copre con una coperta pesante, io l&#8217;ho messo in cella di lievitazione a 39gradi.<\/p>\n<figure id=\"attachment_17338\" per me, un circolo vizioso, fino a che non riesco a trovare il perfetto gusto (non acido) e consistenza (cremoso ma non liquido).<\/p>\n<p style=\"text-align: justify;\">I miei ingredienti di base esserci.<br \/>\nSi sente solo ancora una punta di acido.<br \/>\nBene, ma non ottimo&#8230; ci devo ancora lavorare parecchio per uguagliare la delicatezza e la cremosita&#8217; fatta da Dana&#8230;<\/p>\n<p style=\"text-align: justify;\">Chissa&#8217;, magari la prossima volta sara&#8217; meglio \ud83d\ude42<\/p>\n<p><span style=\"color: #ff0000;\"><strong>Aggiornamento al 2 Novembre 2023<\/strong><\/span><\/p>\n<p style=\"text-align: justify;\">E ci sono ricascata nuovamente, anche se con diversi anni di ritardo.<br \/>\nPartendo dalle materie base freschissime (latte 3,8% e yoghurt grasso), ho tenuto in cella di lievitazione a 44gradi per circa 24 ore.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large
